A Slice of Warm Comfort: My Short crust Pastry Chocolate Fold with Vanilla Ice Cream

Discover Chef Dumebi’s warm shortcrust chocolate fold served with vanilla ice cream — a nostalgic dessert inspired by childhood visits to New Yorker restaurant in Lagos and recreated as a simple, comforting treat for her daughter. A sweet Afro-European memory captured in one dessert.

Last night in my kitchen, I pulled out something simple — the kind of sweetness you make when dinner doesn’t matter but a smile does. My daughter has a soft spot for desserts, especially warm ones, so I reached for shortcrust pastry, chocolate, and a tub of vanilla ice cream. No fuss. No rules. Just love in a warm, sweet fold.

As that pastry baked and the kitchen filled with buttery chocolate aroma, it took me back to a childhood classic — a restaurant in Lagos called New Yorker. My father would take us there for a burger or something sweet, usually as a treat after school or on random Sundays. It wasn’t just the food; it was the feeling. That uncomplicated joy of being cared for. That moment of being seen.

This dessert reminds me of that.

Why This Dessert Works Every Time

It’s warm and cold, crisp and soft, nostalgic and new — everything you want in a quick sweet that carries memory in every bite.

  • The pastry turns golden and flaky

  • The chocolate melts into a soft, rich centre

  • The vanilla ice cream settles over it, gently melting into the folds

  • A dusting of icing sugar finishes it like a quiet blessing

It’s the kind of dessert that doesn’t ask for permission. It just makes you happy. And sometimes that’s all the kitchen needs to be — a place where joy rises gently in the oven.

A Mother–Daughter Moment

As soon as I set the plate down, the ice cream slowly ran into the warm pastry edges, creating a glossy vanilla ribbon. My daughter didn’t wait. She took the first bite, eyes widened, and that was it — the dessert won.

It reminded me of how my father used to watch us enjoy our treats at New Yorker: silent approval, proud smiles, and a shared sweetness that needed no explanation.

Serve It When…

  • Dinner isn’t necessary, but comfort is

  • You want something quick yet satisfying

  • You crave a taste of childhood

  • You want to recreate a moment for someone you love

Food is memory.

Food is storytelling.

And sometimes, food is simply a reminder that joy doesn’t need a long recipe.
